AJAX POST and the plus sign (+) -- how to encode it?

I'm POSTing the contents of a form field to a PHP script via AJAX and escaping using JavaScript's escape(field_contents). The problem is that any plus signs are stripped and replaced with spaces. How can I safely "encode" the plus sign and properly "decode" it on the PHP side?
