Solutions for Missing Text in FF7 Rebirth Demo:
Two methods can resolve this problem. First, highlight the demo on your home screen without exiting. Press the Options button (usually next to the Triangle), select "Manage Game Content," and download the English language pack. Restart the demo to see if the text appears.
If this fails, locate the FF7 Rebirth demo in the PS Store. Two versions exist; only one supports English. Check both versions by pressing X to see language support.
